Texas BBQ Smoked Hamburger Patties with True Bark Signature Flavors

Yield: 4 large patties

Prep Time: 20 minutes

Cook Time: About 1 hour to 1 hour 15 minutes (smoke + finish)

Total Time: Approximately 1 hour 30 minutes

Ingredients

For the Hamburger Patties

  • 2 lbs ground beef (80/20 lean-to-fat ratio is ideal)

  • 2–3 tablespoons True Bark Traditional Blend (adjust based on your taste preference)

  • 1 tablespoon Worcestershire sauce (for extra umami, optional)

Note: Overmix the meat as little as possible to maintain a tender, juicy patty. Gently form 4 equal patties (about ¾ to 1-inch thick). For an even cook, press a slight dimple in the center of each patty.

For Smoking & Finishing

  • Wood Chips or Chunks:

    • Post Oak (our go-to wood for an authentic Texas flavor)

    • Alternatively: Pecan, Hickory, or Mesquite are also great options.

  • Optional Spritz Mixture:

    • 1 cup apple Juice

    • ½ cup water

(This helps keep the patties moist during smoking.)

For Basting (Optional)

  • True Bark OG Sauce

(Use during the final sear or as a finishing glaze.)

Step-by-Step Instructions

1. Prepare the Patties (20 minutes)

  • Mix the Meat:

In a large bowl, gently combine the ground beef with True Bark Traditional Blend, salt, pepper, and Worcestershire sauce. Be careful not to overwork the meat.

  • Form Patties:

Divide the mixture into 4 equal portions and shape each into a patty about ¾ to 1-inch thick. Press a slight dimple in the center of each patty to ensure even cooking.

  • Chill (Optional):

Place the patties in the refrigerator for about 15–20 minutes. This helps them hold their shape during smoking.

2. Preheat and Set Up Your Smoker

  • Preheat:

Heat your smoker to a steady 225°F.

  • Prepare Your Wood:

Load your smoker with Post Oak wood (or pecan, hickory, or mesquite for a different twist) to create a robust smoke.

  • Set Up (Optional):

If you choose, fill a small spray bottle with a mixture of apple juice and water. This can be used every 20 minutes to spritz the patties and keep them extra juicy.

3. Smoke the Patties (Approximately 45–60 minutes)

  • Place on the Smoker:

Arrange the patties on the smoker grate, leaving room between each for the smoke to circulate.

  • Monitor and Spritz:

Smoke at 225°F for about 45–60 minutes. If desired, spritz lightly with the vinegar-water mixture every 20 minutes.

  • Check Temperature:

For a medium-rare to medium finish, aim for an internal temperature of about 130°F–135°F. Adjust the smoking time if you prefer a different doneness.

4. Finish with a Sear and Sauce (10–15 minutes)

  • Searing Options:

    • Direct Sear on the Grill or Cast Iron: Transfer the patties to a preheated grill or cast iron skillet at 350–400°F. Sear each side for 2–3 minutes, or until a flavorful crust forms.

    • Smoker Finish: Alternatively, brush the patties with True Bark OG Sauce and increase the smoker temperature for an additional 10–15 minutes to set the sauce and create a sticky, smoky glaze.

  • Final Baste:

If you didn’t baste during the sear, feel free to add a final drizzle of True Bark OG Sauce right before serving.

  • Cheese please: Top off the patties with your favorite cheese.

Ch

5. Rest and Serve

  • Rest:

Let the patties rest for about 5 minutes to allow juices to redistribute.

  • Serve:

Enjoy your smoked hamburger patties on a toasted bun with your favorite fixings, or serve them as a hearty main dish.
